Johnny Di Francesco, who is of Neapolitan descent, started making pizzas when he was twelve years old, and he opened his first pizzeria at the age of eighteen.  With his 400 Gradi project he has succeeded in his intention to bring the authentic Neapolitan pizza to Australia and he has become a bonafide institution for the entire country.  The locale is very curated; the table settings are elegant and sober with linen napkins, crystal wineglasses and no tablecloths.  The dough is the traditional type of the Verace Pizza Napoletana (authentic Neapolitan pizza).  The products used for the toppings, even the more creative ones, are of highest quality.  However, the margherita is still the best way to taste the pizza.  The wood-fired oven which burns at 400 degrees gives the name to the establishment.  The service is well above the standard of your usual pizzeria.  The dessert proposals are excellent, among which we highly recommend the Tiramisù.
