A stone's throw from the historic Porta Pia is Pro Loco Pinciano.  It is a restaurant-pizzeria whose ingredients come exclusively from the Lazio region.  There are two internal dining areas with 60 seats and some outdoor tables on the sidewalk out front.  It is like an old warehouse; the walls are bare with exposed brick arches, which give character to the rooms. You’ll find marble tables, wrought iron chairs and benches, some vintage objects, like a bicycle hanging from the ceiling, and a blackboard with notes.  All of these elements make the space welcoming but not very well-lit. The knowledgeable staff is friendly and available to narrate the origins of the raw materials used for both the pizza and for the cooked dishes. The pizza is baked in a wood-fired oven.  The dough is the result of a mixture of 00 and whole grain flours with 72 hours of leavening, and has a grainy texture. To the eye, the pizza presents itself as a disc of thin and soft dough in the center which is slightly higher at the sides.  It is well baked, light and digestible.
