“What we are is what we know how to do,” is written on the wall of this delicious pizza-by-the-slice place. They certainly know how to make a great pizza. The organic flours and the Einkorn wheat are expertly used in a dough that can also boast a perfect leavening. The crunch of the base and of the crust’s exterior harmonize with a bubbly and highly digestible interior.
The numerous ingredients used are extremely fresh and of high quality. The toppings are unusual and creative. There is, however, no impression that they are trying to dazzle or exaggerate. Instead the pizzas are balanced and well-thought out. The staff is attentive, young, courteous and also very well-prepared. Truly great at what they do.
