Mater as in mother, or as in mother yeast (sourdough). This is what inspires the work of Amalia Costantini, a female pizza chef who cooks with passion and dedication. She is self-taught and her establishment has become a landmark in Rome for pizza tasting. It is a charming place, with light colors and a distinctly feminine touch, located about 30 minutes from the capital. The service is young and attentive. The pizza menu, specialty focaccias, and fried dishes change according to the season and the products available (many of the products come from local producers or are Slow Food Presidia products). The dough is very light, fragrant and perfectly leavened. Every bite is balanced between a pleasant and measured crunchiness and an overall softness.
