Da non perdere
The I Quintili pizzeria was opened towards the end of 2017 behind the Tor Bella Monaca. The décor is minimalistic and done in total white. The service is fast and courteous. The style of the pizza is casertano (from Caserta), with a boat-style canotto crust which is extremely well-developed and bubbly. The flour used at Quintili is obtained by grinding pregermined grain. The dough is very light and digestible. The pizza chef is Marco Quintili, a young casertano who has been working in Rome for quite a few years now. On the menu, there are classic pizzas and others that are more unique, such as the Marinara Sbagliata or the Casertana with red potatoes, purple French potatoes, and the white potato from Avezzano, papacella, black pork from Caserta and provola from Agerola.
