Bioesserì in the Brera area is a pizzeria restaurant that offers only high-quality organic products. The establishment is quite large and therefore ideal for groups. The service is slow but the waiters are very courteous. The pizzas are made using a mixture of stone-ground flour (type 1) with a natural leavening time of 72 hours. The crust is slightly crunchy and the pizza can be classified as “gourmet”. The margherita is excellent. The pizza that we strongly recommend is the Identità with buffalo-milk mozzarella, pachino sauce, pecorino cheese, basil, and organic EVO oil. Doughs made with wholegrain spelt and gluten-free doughs are also available.
