The dough is well risen for 30 hours with high hydration. The pizzas are well baked. The crust is elegant and well defined. The margherita is exquisite. It is Neapolitan DOC with San Marzano tomatoes, fiordilatte from Agerola and basil. Among the Cilento pizzas, the Margherotta is definitely a must, it is a tastier and spicy version of the margherita thanks to the nduja of Spilinga and the cacioricotta of Capra del Cilento.
