This unique pizza experience by Franco Pepe is found at La Filiale, a “kiosk-pizzeria” immersed in the marvelous context of the Albereta di Erbusco (BS).  He opened this modern, welcoming place in 2017.  The large picture windows overlook the resort’s park and render this culinary experience even more extraordinary.  The pizza dough is light and perfectly digestible.  It is thin in the center with a pronounced crust, and is baked in an electric oven at 480° for not more than a minute and a half.  The sourcing of top-quality ingredients includes numerous DOP and IGP products (from the San Marzano tomato to the anchovies from Cetara).  This translates to a menu that is varied and rich in gems such as the outstanding “Scarpetta” or the “Guancialina,” created specifically for La Filiale by Franco Pepe.  The ample wine list is selected with care and includes labels from the best wineries from Franciacorta.  The staff is always attentive to the needs of the patrons, even those with four legs.
