To the side of the Termini station you can access the Mercato Centrale of Rome where, found among the various other proposals, the pizza by Pier Daniele Seu stands out brilliantly.  It is an informal and crowded, but very tidy location.  Its beverage service, managed by the Mercato, is quick and served directly to your table.  The pizza is round, baked in a wood-fired oven, and rotates among a choice of eight types; one of which is seasonal.  You order and pick up at the counter, and it is served pre-cut into slices on black resin cutting blocks.  The dough is made from organic type 0 and type 1 flour.  The result is a pizza that is soft and thin in the center.  The crust is high and fluffy; however, a few burnt bubbles are present.
