Giancarlo Casa’s pizza has been talked about for at least 18 years. Often mentioned by the specialized guides, it has the merit of having started a new conception of pizza (and pizzeria) when in Rome there was almost only the ‘scrocciaarella’. A search for the dough and the ingredients that has never stopped. Light dough, thin base, low crusts but well-grooved. The overall offer is very rich and varied and it is asserted by a large blackboard that changes daily, starting with the fries and the flavour of the rice balls, among the tastiest in Rome. On the menu however, all of the red and white classic pizzas and of “La Gatta” in addition to some first and second meat courses, side dishes, salads. The wine and champagne list (about 200 labels) and the menu of handmade beers (about sixty), being well thought-out and well-organized are more of the distinctive features of this place.
