An informal place, perhaps with tables which are too close, is the stage of the personal kingdom of Giovanni Mandara, who, from the Amalfi Coast, landed in Emilia eleven years ago with the intention of making Neapolitan pizza which today fulfills the most ambitious gourmet standards. Light dough, made from different wheats and sea water for a pizza poor in salt but rich in its flavor: perfumed and fragrant.
