Alberto Morello for “Gigi Pipa” studies and prepares tasty pizzas made with a dough which is leavened for up to 72 hours (the starter is in front of the customers’ eyes) and traditional pizzas which are leavened starting with the biga (the “pat” of the home rising agents). Taste and above all lightness are extraordinary. In addition to the flours which are stone-ground, the best part of the ingredients is the quality of the products which come from the garden behind the pizzeria: vegetables at ‘0 meters’ away which combine well with the other recognizable Pdo toppings.
