Natural yeast (sourdough), stone-ground sprouted wheat germ flour, long rising times (from 72 to 96 hours): with this premise – and a few tricks, like the small addition of bran, spelt and soy in the dough – the bed is prepared for the local ingredients (caciocavallo of Ciminà, sundried tomatoes, ‘nduja of Spilinga) happily married to authentic buffalo mozzarella, burrata and stracciatella from the Salento but also truffles from Norcia and cured pork loin from the Senese belt.
