This has been a destination for people who have been seeking gourmet pizzas for quite some time. But here, as patron Patrick Ricci used to say, the aim of the pizza chef is not to make surprises as everything is based on substance. Starting from the ingredients, which are carefully selected, from the ancient wheats which are stone-ground and moving on to all the other ingredients. You will indeed often see slow food ingredients included in the ample pizza menu such as “piennolo” tomatoes or Salina’s capers, and the roman tanned or Castelpoto red sausage. There is even perhaps a little imagination in how the pizza is prepared and how it looks, but without exaggeration. The pizzas are already served by the slice to encourage sharing.
