A nice place in the center of Trieste with a modern and well-finished interior. The tables, which are fairly close to one another, are not very spacious, but the atmosphere is welcoming and the service is courteous and, above all, the pizzas are of an elevated quality. Pizzas with organic and stone-ground flours are offered, made from traditional Italian grains. Well-cooked, but soft, prepared with select ingredients and delicate Fior di latte cheese. The sauce is excellent: made with 100% Italian whole peeled tomatoes, squeezed by hand to preserve the pulp. A daily gourmet pizza is always available, with ingredients that are uniquely combined. The home-made “by the spoonful” sorbet is recommended. Excellent wine and beer list.
