In Bologna, one knows, there was a before and an after Berberè. They for one, have the peculiar ability to change while remaining intrinsically, and exquisitely themselves. This seems to be the favoured mantra of the Aloe brothers who, from Calabria, have taught northern Italy that, beyond the Neapolitan, another pizza was finally possible. Moreover the simple dough, a normal one, realized beginning with a simple pre-ferment, is a masterpiece of elegant simplicity, quintessential in its fragrance, where, at the same time, a softness and a tension cohabitate, crunchiness and crumbliness. It is not a coincidence that the crust itself, open and sniffed, perfumes of salt and of sun. The pizza, on the whole, is exquisite: generous toppings are with ingredients of the highest quality, and always seasonal. The base, aromatic and fragrant, is substantial but digestible. The decor, even though in an underground style, is polished, and there is a commendable selection of music played in the background.
