As stated by the name of this establishment, once it “was pizza”, now it is certainly something new and different. The idea of Ivan Gorlani, pizza chef born as a pastry chef, is that of the gourmet pizza, cut into slices and topped with small towers of excellent and original ingredients. However, the real novelty is in the dough, steam-cooked and then finished off in an electric oven. The result is a decadently thick foccacia, high, crispy and very light (in the menu it is called “cloud dough”). The establishment is modern, welcoming and elegant. The service is very attentive, even in describing the style of the pizza. The wine list is good. A 30,00 euro tasting menu is available.
