The owner of Fandango, Salvatore Gatta, is a confirmed point of reference in the region for quality, originality, and the capability to transform his “discs” into a symphony on the plate that celebrates the local territory in particular. His pizzas, which have clearly a Neapolitan inspiration in style, take much from the primary materials of the territory. The menu moves agilely from tradition to innovation, with doughs on par with expectations and high quality ingredients. The suggestion on the menu for the beer to pair with each pizza is intelligent. Good cantina, a window onto the best that the territory has to offer, home to the Aglianico del Vulture. A visit that is worth making, despite what might be a difficult journey, because Salvatore’s pizzas are a monument to Basilicata, and an occasion to taste Basilicata in one stop (even though a trip through the region would be fascinating!)
