La Buca Dei Diavoli
A great dining room of the kind that, in times past, was an old furnace but today, is a spacious and airy dining room with tables that are well-separated. The waitstaff is obviously well-experienced. The doughs are made with organic flours and boast long rising times of up to thirty hours and can also be prepared with whole-wheat flour, Khorasan grain, gluten-free and hydrolysis dough leavening. A wood-oven is used and the offering, which boasts first choice ingredients and a traditional as well as seasonal section, shows personality, consistency and a mastery of tastes; completing the offering is a more than dignified à la carte proposal of both meat and seafood.
