The Sud pizzeria is located inside the central market of Florence: there is the possibility of enjoying pizza comfortably seated on an upper floor. Few dishes are offered: from the traditional Neapolitan tradition, with some gourmet offerings, all in authentic Neapolitan style. The dough of the Margherita and Napoli is light and yielding when cut, with soft and well-defined edges; its easy digestibility indicates a correct leavening. Excellent ingredients: the tomato of the margherita is well-distributed and balanced compared to the mozzarella; this is also present on the Napoli, to dampen the flavor of the fresh anchovies.
