Opened in March of 2017 in the Prati district, close to the Vatican, Osteria di Birra del Borgo is a dynamic and modern establishment, centered on the pairing of beer and cuisine. The protagonist in this space is the large central counter with 24 on draft Birra del Borgo beers, in addition to a small selection from guest breweries. After an initial consultation with Gabriele Bonci, today, the pizza carries the signature of Luca Pezzetta, his talented student, who works with different types of flours, with a double fermentation and an 80% hydration. The pizzas by the slice are fragrant and topped with tasty ingredients. The round “Gia’ viste” (already seen), are very light and prepared with interesting flavor combinations.
