Officine Degli Apuli
Old Bari is the name of one of their pizzas, but in general this summarizes the spirit of the Officine degli Apuli, a corner (a pretty large one) of Puglia in the historical center of Bologna. So much so, that even though we have been to this place several times, our choice had never included the pizza, given that this establishment is known as the place par excellence for fresh orecchiette, fava beans or chickory to be paired with a good regional wine. The pizza does not make the cut when compared to the other dishes, even though the leavening is good (but not perfect) and it is prepared with better than average ingredients. This place is usually pretty full, hence, a reservation is recommended, but a seat can be found with a bit of patience.
