Filomena Palmieri has always got her hands in dough. She is a tireless innovator with a grand passion for the gastronomic traditions of Alto Cosentino and Pollino. The great counter, the protagonist of the establisment, designed also as a deli counter, welcomes and arouses the curiosity of the customers. Always present, according to the time of year, are new specialties as well as those from antique recipes, such as the ‘Schicculiatà.’ Filomena’s pizzas, both served by the slice or whole, are characterized by their lightness: the dough is leavened for 96 hours.
