Kamut, burnt grain, spelt, hemp, type two flour and whole grains are the basis of these pizzas which, to define as excellent, limits the reality. Their lightness and digestibility are sublime. Uncle Giacomo, the able pizza chef of great experience, but also continuous study, is a master of the long leavening and the sourdough starter; to this is added his vast knowledge of local and non-local producers, from whom he obtains products of great quality and freshness. The result are little masterpieces of delight, second to none, soft, light, delicious. The aroma of the dough recalls a perfectly executed leavening cycle, salt reduced to the minimum leaves room for the sweetness of the dough. The establishment is near Martina Franca which is among one of the most beautiful countrysides in Valle D’Itra. It has an easy and convenient car park. The dinning area is spacious, the service young, attentive, kind and fast, the wine list is short (designed to be so) reduced to a few lables, there are also craft beers.
