Proloco Dol (from the acronym which means ‘from Lazio’) is a pizzeria with a cuisine that was born from a shop in Centocelle, opened some years back by Vincenzo Mancino, a great discoverer and promoter of products from Lazio.
Today, the pizza of Simone Salvatori, cooked in pans and served on wooden cutting boards, has become one of the major attractions of this establishment. An informal atmosphere with a large deli and cheese counter; nice service, thanks to the experience and team spirit of the staff.
The pizza is priced starting at 16 euros per pan (for about 2 people) to 20 for the more elaborate ones: long rising times, crunchy at the base and soft on top, tens of varieties available for white and red pizzas.
