Emilio Brighigna’s journey has been steady and progressive, he has three successful establishments, united by his philosophy and the meticulous research into flours, leavenings, and ingredients from local suppliers. The premises at Spoltore, a few minutes from the center of Pescara, are modern and comfortable. The Neapolitan pizzas that come out of the exclusively wood-fired oven are lavish, tasty, light, perfectly cooked and gratifying. Apart from the classics and historical pizzas with their enjoyable pronounced crusts (which can be topped as you please), there are focacce, three interesting variations of the Margherita and a seasonal menu from which you can choose the highly recommended “Summer parmigiana”. There is an intelligent choice of wines and beers.
