Casale Rufini is a family-run business immersed in the Roman countryside near Gallicano in Lazio. Here the “pizza gladiator” is Marco Rufini, a chef and pizza chef with substantial experience under his belt, who has always embraced the philosophy of locally sourced foods. Almost all of the raw ingredients, in fact, are top-quality products from the territory and come from small local businesses. There is ample seating with an outdoor wood-fired oven that is perfect for summer. It is spacious and the atmosphere is welcoming. There are several hand-sanitizer stations. The staff is well-prepared and professional. The wine list and the Lazio beer list are very interesting; they include both regional and prestigious labels. The fried products are exceptional, such as the supplì al ragù and the stuffed artichokes. Marco Rufini’s pizza is light and crunchy, soft to the bite, with a slightly pronounced crust. The toppings are tasty and seasonal. We recommend trying the “M’Poi Capi,” which is stuffed with Bologna IGP mortadella, pistachio cream and buffalo-milk stracciatella.
