If you make the trip to the middle of the countryside of the province of Bologna in San Giovanni in Persiceto, to taste the pizza of “Civico 29”, rest assured you will not be disappointed. Here the pizza is truly made according to the ancient Neapolitan tradition in a scrupulous and deeply respected manner, with passion and competence. In this pizzeria-trattoria, the kitchen staff is all Neapolitan and nearly all related. It is this family’s passion that guarantees a product of the highest quality, and it is truly evident. The dough is fragrant and balanced, with a high crust that is cooked to perfection. The long leavening of over 48 hours with 68% hydration makes it a product that enchants you from the first bite. Quality ingredients are used for the toppings (Agerola fiordilatte, San Marzano tomatoes…) making the pizzas something you just must taste. Honourable mention goes to the Neapolitan cuoppo and to the babà, which seems to have been made in a pastry shop in Naples. Overall one of the best discoveries of recent years, truly worth trying!
