Between the Louvre and the Paris Opera, a few steps away from the Royal Palace gardens, stands the Daroco Bourse. It is a magnificent structure, which was previously occupied by the legendary Jean Paul Gaultier boutique. Most of its customers tend to come from the world of fashion and design. Raw vegetated stone walls counteract with gigantic chandeliers, green marble tables and design armchairs. The ceiling is completely covered by a mirror of more than 10 meters, with the spectacular view of the open kitchen and the rounded wood-fired oven. The establishment was converted by the architect and decorator Francesca Errico, who along with her partner Olivier Delannoy, has also conceived the design for Danico and, more recently, Daroco16. The hospitality is friendly, observant and charming. Many staff members are not Italian, but they have lived in Italy and they have all been trained by the chef Federico Schiavon who is passionate about pizzas and hand-made ravioli. The pizzas are generous; thin with high crusts, perfectly baked, soft and light. Great care is taken in the choice of the raw ingredients which come from Italy, with some concessions made to products from other Mediterranean countries. There is also an exceptionally good selection of starters, first and second courses and desserts on the menu.
