Travelling through Basilicata, one of the obligatory stops is still at Pizzeria Fandango at Scalera di Filiano. The pizza by Salvatore Gatta is a testimony to the region and its gastronomic excellence. Every pizza is a wonderful representation of the Lucanian territory, with just a peak to Campania, given the Neapolitan inspiration of his style. The doughs and the leavenings are always impeccable, while the choice of the primary materials is an anthem to quality. There is a significant presence of Slow Food Presidia products on the menu with an almost obsessive care taken in examining the origin of the different products. The selection of pizzas is truly extensive, and there is an intelligent selection of a particular beer to pair with each pizza. The wine list is also satisfactory and includes the “Terra dell’Aglianico del Vulture.” The proposal called “Giro intorno alla pizza,” is also interesting; it is a sort of tasting menu for the enthusiast or the curious. The service in the dining area is both courteous and attentive.
