Among the proposed doughs you can choose from the classic Neapolitan, the Sicilian (based on Russello wheat flour), and the tasty Enkir (with spelt wheat). Quality raw materials enrich the pizzas. Local products are preferred like the “Trunzo di Aci” cabbage, “Ragusano” fior di latte, and “Sciacca” anchovies. Not to miss is the revised parmigiana, “Non è la Norma” with eggplant, salted ricotta and confit tomatoes. But remember, you can never go wrong ordering the “Classic” Margherita.
