Located in the Pratello area, this establishment gained its reputation thanks to the great combination of taste, quality and authenticity. It starts from the choice of dough, traditional or the dough of the day, made with organic flour, a sourdough starter and a leavening time of a least 48 hours. It then continues with a range of non-trivial ingredients, with a clear focus on vegetarian and vegan customers. The research done on the ingredients is the link between the pizzeria and the kitchen of the homonymous tavern just adjacent to the pizzeria. The same degree of research is put into the selection of wines and beers, the wines are organic and biodynamic while the beers are all crafted. The pizzas have a high crust but are light, cooked to perfection, perhaps just missing a little dash of oil. The environment is pleasant despite the limited space inside. In the summer you can pleasantly dine under the porticoes. There is some improvement needed in terms of the service, probably due to the success of the establishment and the high turnout of customers.
