Giuseppe Petruzzella has captivated Puglia. He continues his solo-management of the Vecchio Gazebo since last year, and stays true to the exclusively Puglia-style pizzas. His always winning formula includes: healthy flours, sourdough, long maturing times and a wood-fired oven. The result: light pizzas that are flavorful and digestible. Little fuss and a lot of substance, given the excellent products used for the toppings and the moderated dose of creativity all in honor of the Puglia tradition. Some of the best examples are the Baccalà pizza with pumpkin cream, fior di latte, baccalà, confit of cherry tomatoes, stone leek onions and capers, or the Mon Amour pizza with baked cherry tomatoes, smoked buffalo-milk mozzarella, friggitelli and Martina Franca bacon, or the pizza with cherry tomatoes, anchovies, and Leccine olives. The selection of oils, beers and wines is vast and well-researched, with truly honest prices.
