The La Cruna del Lago is an obligatory stop for whomever is passing through Lesina. It is noticeable among the houses on Via Isono, where it emerges like the bow of a boat with its panoramic little terrace overlooking the lagoon, ready to take to sea. This is the kingdom of Vincenzo D’Apote, an innovative 2.0 pizza chef; one of those who needs little to create real masterpieces. His round pizzas are contemporary and in the style of the legendary Padoan. The pizzas speak for themselves; some have a double baking, and are crunchy with a soft interior. They are highly digestible. There are also pan pizzas which are smaller, high and soft, and cut in half to insert ingredients inside in addition to placing them on top. In general, all of the pizzas here express an aesthetic beauty, harmony of flavor, and tell a story. The carefully chosen high-quality raw materials span from the Salincornia (here used first), to the Fortore stracciatella, to eel (a must in Lesina), to the blue crab from the lake.
