The Polzella family has dedicated years to agricultural businesses. The old farm used to stand where the pizzeria and the residence are now situated. Throughout the years, the ventures have changed but the strong bond with the earth remains. They continue to produce wheat, with special selections of antique grains which are stone ground in the family mill. Thus, there is a large selection of flours to produce the bread, which is baked in a wood-fired oven and made with sourdough. The same is true for the fresh pasta and for the pizza doughs. The establishment is very spacious and modern with an extensive external gazebo. The kitchen offers traditional dishes from Tuscany, and the pizzas are Italian style. Maybe a little more attention should be given to the length of time that the pizza is in the oven.
