This pizzeria located in the center of Ventimiglia, offers an excellent selection within a proposal that is somewhere between tradition and innovation. The pizza chef has chosen to avoid overly-sifted flours in favor of whole wheat or semi-whole wheat flour. Careful attention is given to the leavenings and maturation to make the product more digestible. Much care is also taken in the choice of the raw materials, employing DOP and IGP products as much as possible, including a good number of Slow Food Presidia items. The variety of available doughs widens the choice of the pizzas. However, the Roman style pizza in pala, with the patron’s choice of a double topping, might be the most characteristic of the locale. The service is courteous and prompt, and has organized their work well, and the staff is very attentive to the patrons. The selection of wines and beers is decent. A good part of the clientele is French; given the proximity to Ventimiglia, they cross the border quite willingly.
