When you enter the Elogio delle Farine, you should not expect much from the place itself – with a bit of imagination, however, you can transport yourself to someplace on the other side of the Mediterranean – but you can expect quite a bit from the pizza. Erasmo Lentini, the Sicilian who opened the establishment four years ago in the residential area of Paganica (in Aquila), has dedicated many years of research and experimentation to his pizzas. Thanks to a mix composed with precise proportions of type 0 flour and hemp flour, the dough of the pizza – served round, by the slice, or in a dish, regular or maxi – is so light that it can be appreciated even if topped with decadent ingredients.
