The pizza at Lievito 72 in Trani has proven itself to be one of the best in the province. The premises are very welcoming, the service is fast and the staff is always very attentive. The menu proposes few pizzas that vary seasonally based on available ingredients. The dough is made with a live sourdough starter and stone-ground flour. It is left to leaven for at least 72 hours. The result is a soft pizza with a crunchy crust that is very light. The toppings are always very well-balanced, and are always added to the pizza 50% before baking and 50% afterwards in order to conserve the authenticity of the flavors. The ingredients have all been carefully selected from among the top products from Puglia and are always very fresh. The final result is a pizza in a square form, with a dough that is half Neapolitan half Roman, that is tasty and highly digestible.
