Mama is a new venture; it is a project with romantic and somewhat farsighted overtones. It begins with bread and the art of baking, which is the Quaglia family’s art. Mama was created by Davide at Lendinara, and the bakery was created by his father Pietro in 1961 at Sant’Urbano. The river Adige passes through the middle. Mama distinguishes itself for its original contemporary concept and for its unquestionably excellent products. There is a constant research into baking techniques, doughs and styles. Davide Quaglia’s leavening secrets (but also those learnt from the chef Luca Crivellenti, Simone Padoani ai Tigli’s pupil) all emerge clearly and make Mama’s pizzas a pleasant journey on a new road to flavor. We recommend the Vapore, the basic pizza, and also the Parmigiana, with unsalted Parma prosciutto from the Sangiovese region, cured for 40 months. It is a nice establishment with a pleasant design: minimal warmth with atmospheric lighting. Do not miss the breakfasts and the fresh bread at the counter.
