Espedito Ammirata has brought his Neapolitan pizza to the Sila, at the entrance to the Bisignano district. The focal point of his enterprise is, in fact, the Margherita Stg, prepared with exclusively DOP Neapolitan ingredients. The pizza chef and his team honor tradition by respecting the required standards with mastery. Because of this, the dough is light and elastic. The pantry is a testament of his great care in the research into the ingredients which include agri-food treasures from the local territory and southern Italy. From the anchovies from Cetara to the Sammarzano tomato from Agro Sarnese to the DOP Nocerino, the Agerola provola to the black olives from Ferrandina, they are just a few of the Campania products valorized in the menu dedicated to traditional pizzas. Admirable care is also taken in their more creative repertoire, entitled “estro culinario” (culinary extravagance). An example is the Raffinata pizza with smoked salmon, local stracciatella, DOP crushed green pistachios from Bronte, glazed Modena balsamic vinegar and basil.
