It is quickly understood that this is an authentic Neapolitan pizza.  There is no need to check the stamps on the menu which certify it as such.  A second, important guarantee is the oven which is in full view of the patrons.  Even before doubling its size in April 2019, this was already an indispensable destination for lovers of the genre.  They were even willing to undergo the patience of long waits with growing hunger.  It is situated between the borders of Cosenza and Rende, a junction in the populous Bruzio hinterland.  In no time at all, N’ata cosa has strengthened its reputation with demonstrated facts:  a dough that few can compete with, “without grease and made with natural yeast,” the managers explain, and, above all, a meticulous care in the selection of the raw materials.  They include DOP products such as the San Marzano tomato, pecorino romano, Campania buffalo-milk mozzarella, Silano caciocavallo, gorgonzola and typical products from the local area such as ‘nduja from Spilinga and the Tropea onion.  All of the “products have been selected in collaboration with the Nutrizione Umana association.”
