Osterie Moderne is a pioneering establishment in renewing the style of pizza. It has done the same for the world of wine and cheeses, which could be rediscovered weekly through their special thematic evenings. Luca Olivan and Federico Biasinutto started a procedure, which leads to lighter doughs, earlier than others, using stone ground flours and lengthy leavenings. There are traditional “Neapolitan” pizzas and “high” pizzas to be sampled in an unconventional establishment.
