The pizzeria Piano B is not far from Ortigia. It is an enterprise owned by Friedrich Schumuch, a half-Sicilian and half- South Tyrolean pizza chef. His mission is the quest for the perfect dough. His lengthy experience in Rome and his studies at the Università della Pizza allowed him to perfect his Roman dough. The secret is the organic flours from Sicily. Beyond the classic round pizzas, you must absolutely not miss the pizza by the meter made with a natural leaven called biga and with a high hydration percentage. Experimentation and research are the keywords of this pizzeria which offers a truly gourmet experience thanks to the selection of raw materials which are high quality and locally sourced. The many desserts are an excellent conclusion to the meal. An example is the dessert pizza with chocolate and candied orange. The service is energetic and attentive. A treat for enthusiasts: on Saturdays, you can buy bread baked after 24 hours of natural leavening.
