Here the doors are opened onto flavor by a tried-and-true mechanism, and it has been successfully replicated in Novara and in Como in Lombardy. For the more daring customer there is the “pistacchiosa” (white with the trendy combination of mortadella, and pistachios) or the San Gaudenzio, dedicated to the patron saint of the Piemontese city, with a crust stuffed with Gorgonzola and sausage. Here the sausage is called luganega and it is chopped into small piece with the point of the knife. The service is efficient and cheerful.
