Le 20 Migliori Pizze in Viaggio in Italia - da taglio e asporto – 2020
1° - Pizzarium
It was the first pizzeria opened by Gabriele Bonci to sell pizza by-the-slice, and today in Rome it is considered an institution. Pizzarium is located in Via della Meloria near the “Cipro” metro stop on line A. It is from this location that Bonci started his revolution. Today Bonci is not just a pizza maker, but also a baker, cook and farmer of the highest level on the national and international scene. He achieved this status after having created an important agricultural circle of small artisans that concentrate on producing the highest quality raw materials. Pizzarium is small but well organized, especially for the Coronavirus emergency, with outside tables suitable for standing consumptions. The staff is fast and well prepared. “Il Nostro” selects each ingredient, starting with the flours, often choosing grains grown in biodynamic or evolutionary blends. The dough is made with semi-whole wheat flour and the toppings are both traditional and seasonal, such as zucchini flowers and anchovies. The pizza with marinated onions, pecorino cheese, sun-dried tomatoes, and parsley is excellent.
