Notice to travellers: If you are heading towards Lake Mergozzo, turn around and change direction; the Fiore di Latte has switched waterfronts, and is now on the more extensive Lake Maggiore. It can be found in the borough of Feriolo, north of Baveno. It is a big house which has expanded its seating; there is even the luxury of a laboratory in full view dedicated to the preparation of the doughs. They are highly hydrated, using a mixed leavening and with a maturation of 36 hours in controlled temperatures. The growth of the interior has not affected the quality of the pizza, which remains one of the top pizzas in the province of Verbania (it is always advisable to book). And so, even on Lake Maggiore, the Neapolitan standards which dictate the classic pizza are upheld: high crusts and the right ingredients which arrive all the way up here: San Marzano tomatoes, Tuna from Cetara, burrata and provola from Agerola just to name but a few. Verve and lightness, but also versatility and evolution of the flavors on the palate.
