Pizzerie Eccellenti 2020
Pizzeria Giulio Cesare
Make way for creativity. Here it bursts like a (very pleasurable) storm disturbing the monotony of the Piedmont plains. This establishment is faultless in its simple elegance and serves innovative pizzas. Let us immediately make clear what can be improved: the wall seats are too close, and the lights are too low. For the rest, there is pure ecstasy. You will find a young, smiling staff who are precise, with an extra edge that impresses. The pizzas contain all things good that come up from the south (provola, buffalo-milk mozzarella, anchovy oil from Cetara etc.) and other attractive elements, such as Genovese pesto, lard from Colonnato, paprika, and Taggiasche olives. The gorgonzola arrives from the city gates. The wine list has been created attentively and also includes local wines. The beer list is spot on. The pizza is made strictly in the Neapolitan style; it is soft and with a good choice of ingredients which are listed in detail on the menu. On request, any pizza can be baked with a stuffed crust, even with the original combination of ricotta and truffle oil.
