Pizzeria Italiana Espressa is a chain of pizzerias present in the CityLife food court. It is a do-it-yourself formula: before being seated you order your dough (white or whole wheat), your base (red, white or pesto) and the toppings (cheeses, vegetables, cured meats). Many ingredients come from distinguished origins however, at a later hour (about 9pm) they had already run out of some of them. The format is innovative, curious, with the risk, however, of becoming a “fast food” place. Moreover, when there are large groups of patrons, the waits can be long, even if the aim is to serve the pizza as soon as you are seated at your table. Customers sit at long tables that are now divided by plexiglass. The dough, made with stone-ground flour, is leavened at room temperature and is quite fragrant. The beers are the usual ones you would expect to find, and the desserts are to be picked up before ordering.
