In fact, the selection of pizzas, appetizers and desserts is quite varied. When making the dough Santa Caterina only uses mother yeast, which guarantees a good digestibility. In this case, the leavening time required is longer, up to 72 hours. The final result is an absolutely light and flavourful dough. Santa Caterina, which takes its name from the church just opposite the establishment, is sensitive to individuals with celiac disease or who are lactose intolerant. The pizzas on the menu, in fact, can also be enjoyed in their gluten-free versions and with lactose-free dairy products. The selection of beers is decent.
