The Falcone family, originally from Tramonti in the province of Salerno, the “town of pizza chefs,” have been running the most historic wood-fired oven in Schio for 37 years now. It is located in the galleria that opens on to the piazza of the Duomo. Simple products with a touch of Campania artisanship (for example the housewife’s mozzarella and tomatoes) make up these pizzas with a soft and well-cooked base. The menu does not have excessive “invented” combinations, however, it has not excluded the ingredients that are dictated by modern taste (speck, gorgonzola, prosciutto crudo, rocket, chicory, porcini mushrooms, and mascarpone). For the connoisseurs of the genre, the establishment offers dough with kamut or unleavened dough. The restaurant is complimentary in case of consumers who are not pizza lovers. The service might require a bit of patience on the part of the patron. The novelty of the year is the “half meter” of the family-size margherita. Delivery is available for those who are prudent regarding social distancing. In nice weather the garden in the courtyard among the old well-restored houses will reassure those who wish for more care with anti-COVID measures in a pizzeria.
